Good morning and happy Monday Tuesday!
This week, Josh and I are house sitting for my sister and her husband while they’re away on vacation. I like to think of it as good practice for the future, although so far the experience has felt more like a vacation than a reality check thanks to the long weekend.
We spent most of Saturday and Sunday lounging around watching movies but yesterday afternoon I finally accepted the fact that the long weekend was almost over and started prepping for the week ahead.
I’ve introduced Josh to the wonderful world of meal planning. On the menu this week: chicken and couscous with fennel, carrots and dried apricots; whole wheat spaghetti with broccoli, pesto and ricotta cheese; and tofu, vegetables and soba noodles in an almond sauce (all of these are tried and true recipes since I’m trying to impress Josh with my cooking skills).
This week will be a little hectic since we’re sharing one car and I’ll have to pick Josh up from the train station every night after work. With that in mind, I did a little prep work yesterday:
Made the pesto for Tuesday’s dinner.

Cut up the broccoli for Tuesday and Wednesday’s meals.
Cooked dinner and made enough for leftovers for today’s lunch.

Cleaned up the kitchen and loaded up the dishwasher (with Josh’s help
).
Josh can’t get over how Type A organized I am.
I’ve also talked Josh into going for a run with me after dinner tonight, which, given my recently developed fondness for running buddies, I am thoroughly looking forward to. On the other hand, with this week’s schedule, it looks like I might have to bust out a few early AM workouts if I want to fit everything in.
