WIAW: Highlights from the Past Week

Happy What I Ate Wednesday!

I don’t have pictures from a recent day’s worth of eats so for this post I’m featuring one meal/snack from each day of the past week.

Thursday

After work, I cooked chicken thighs with kidney beans and brown rice in hot sauce topped with cilantro. Call me old fashioned but cooking for Josh is one of my favourite aspects of co-habitation, probably because every time he arrives home to a freshly cooked meal, he reacts like its Michelin-worthy. It’s definitely increased my confidence in the kitchen.

Friday

For dinner, we decided to go out because we hadn’t had a proper date night in awhile. We went to The Gingerman Social Eatery and shared a platter of cheese and crackers, seared tuna and chicken and mango lettuce wraps.

Three totally random and not necessarily complementary choices, but all very good. We also had a glass of wine each and, of course, dessert (tiramisu).

Saturday

My best friend is moving to Dubai (WAH!) so on Saturday we had a farewell dinner at Stoney’s, which I’m convinced is the greatest maker of sandwiches on the planet. I ordered the Alsacian Chicken sandwich, which has chicken, brie cheese and apple on fresh baked ciabatta.

Sunday

We had Josh’s mom over for dinner and I made tofu and vegetables with whole wheat noodles in an almond butter sauce (recipe from my Power Foods cook book). Her visit was unexpected and since she’s a vegetarian, it was a total fluke that I had planned to cook tofu that night. This is one of my favourite non-meat dishes.

Monday

On Sunday, Josh’s dad stopped by and randomly brought us a box of mangoes. Score! I packed one for a morning snack on Monday (even though I know from past experience that fruit by itself does nothing to keep me full until lunch time – whatever, some things are worth it).

Tuesday

Lunch was leftover chicken and sweet potato casserole from the Canadian Living One Dish cook book.

The rest of the week, we’re likely going to be eating more leftovers.

Workouts

I haven’t done any new workouts this week – I did RPM on Sunday, BodyPump on Monday and BodyAttack on Tuesday. I’m trying the newest BodyPump release tonight – can’t wait!

    All of those eats look so good! I’m jealous of your friend moving to Dubai. Its such an amazing place… and thinking about it now makes me wanna go back!!!
