Weekly Update

Good morning!

I apologize for the recent lack of activity, not only in terms of posting but also commenting on other blogs. I’m still reading all of my favourite blogs daily, but haven’t had the motivation to write thoughtful responses to anything.

Going back to the office after three weeks of working from home has taken its toll. I got used to taking frequent activity breaks during the day and now I’m back to sitting in front of a screen for eight hours. When I get home, the last thing I want to do is turn on my computer, so that even if I have an idea for a post or a comment, I just don’t get around to writing it.

I think the obvious solution is to start incorporating some light activity into my work day. I’m a big fan of the lunch break walk and when the weather is crappy, there’s a GoodLife near my work that runs noon classes. I wouldn’t want to do anything too sweaty but a few of the classes (SH’BAM, BodyFlow, Pilates), I could easily do without returning to the office too gross.

We’ll see – I’m still easing myself back into the morning workout, so I don’t want to try changing my routine too much.

Speaking of routine, t’s been awhile since I did a “weekly update” type of post. These days, my weekly workout routine is usually 2 cardio workouts, 2-3 strength training workouts and one yoga class (which I didn’t do this week – boo!).

Here’s what this week looked like:

Sunday – RPM
Monday – BodyPump
Tuesday – 30-minute run
Wednesday – BodyPump
Thursday – Rest
Friday – Rest
Saturday – Kettlebells

I managed to do one morning workout this week (BodyPump on Monday morning), which is my goal for now. The instructor asked if I was planning to come regularly and I said, “yes” so I feel like I’m really in it now!

I’ll leave you with my favourite recipe from this week – grilled fish tacos from my Power Foods cookbook.

These were unbelievably good and 100% boyfriend approved.

 To make:

1. In a bowl, mix 1 tsp cumin, 1 tbsp oregano, 1 tbsp chili powder and 2 tsp salt with 1/4 cup of olive oil, juice from one lime, and 1/4 cup finely chopped cilantro. Marinate 2 lbs of tilapia fillets (that’s about 12 fillets) with the mixture and refrigerate for 30 minutes (a note to the impatient: I actually didn’t let them marinate for 30 minutes – more like 10 – and you could still taste all of the seasonings).

2. Heat a grill or grill pan to high. Grill fish until cooked. (Another note to the impatient: my cookbook says to grill for 3-5 minutes, flip and grill for another 5-7 minutes; I used my George Foreman, which has two grill plates, and it only took about 2-3 minutes in total per fillet)

3. Transfer to a serving platter and let cool. Stuff 2 flour tortillas with 1 fillet each, avocado, 1 tbsp sour cream, hot sauce and lettuce.

The recipe makes 6 servings in total (2 tortillas/fillets per serving).

So, yeah, go cook that and have a fantastic weekend! :D

  3. I have had a tough time keeping up with blogging/commenting recently too. I have never had fish tacos before, how strange!

  4. I had to break myself away from blogging and technology pretty much the whole summer. I was so over it and needed a break. Sometimes you just have to step away!
