Happy WIAW! As always, thanks to Jenn @ Peas and Crayons for hosting.
One thing I love about WIAW is that it usually marks the halfway point to the weekend.
Not so this week. My work is hosting a tradeshow on Saturday and Sunday and it’s pretty much an all hands on deck situation. So rather than the middle of the week, this particular WIAW is actually day 3 of a 12-day work marathon.
Fun times!
Breakfast was the usual – almond butter and strawberries on P28. I’m not even going to bore you with a picture of it.
For lunch, I had tofu and vegetables with a homemade sesame dip. To make, blend 3 teaspoons of ginger, ¼ cup tahini, 1.5 teaspoons of honey, 3 teaspoons of soy sauce, 1 teaspoon of sesame oil and 3 tablespoons of water.

This was good enough to make raw cabbage taste amazing. No easy feat.
My new favourite treat these days (I’m so over my Halloween candy stash) is Lindt dark chocolate squares.

I had three squares after lunch and they are so satisfying. My favourite way to eat them is with a cup of espresso, although the high dosage of caffeine usually gives me a headache very shortly after. Totally worth it though.
For a pre-workout snack, I had two pumpkin pancakes that Josh made over the weekend using a recipe he found online (he made them without the streusel… and burnt them a little, but I still can’t stop eating them). These got me through my BodyStep class just fine.

For dinner, I ate leftovers from the polenta bake we cooked on Saturday night. It looks pretty unappetizing when taken out of its pie formation but it was still good.

Finally, for my bedtime snack I had some Greek yogurt with granola and blueberries (again, I will hold off on a picture since this is a staple).

A 12 day working week?? That is awful! I just discovered Lindt dark chocolate and I’m so in love with it! I love polenta bake, no matter what it looks like!

Good luck with your marathon! I have no tips, but I’m sure you’ll do great!
Make sure to post all of your eats for the day… The food runners eat after marathons is always amazing, and very interesting… Haha.
